Its production involves some very special techniques: part of the grapes are not pressed immediately, but are set aside for a few weeks to dry. During this process, the grapes become slightly raisin-like.

The remaining grapes are left on the vine for as long as possible, allowing them to become slightly overripe. Drying and overripening cause the water in the grapes to evaporate, concentrating the remaining components and aromas. The complexity of the finished wine is further enhanced by ageing a portion of the wine in oak barrels. Finally, winemaker Daniele Ress decides in what proportions the individual cuvées are blended to create a harmonious whole.
