Primitivo, one of the most popular red wines from Apulia (southern Italy), is being given a whole new twist. How does it work? Quite simply, Primitivo is going cool! To achieve this, the grapes are harvested slightly earlier and the time spent on the skins is kept shorter to avoid excessive tannin extraction.

At the same time, fermentation takes place at a low temperature. The result is a red wine with a pleasant red-fruit flavour, a soft tannin structure and a long finish. When is Primitivo ICE ready to drink? The bottle features a temperature-sensitive label that turns blue at the optimal drinking temperature (8–10 °C). Two hours in the fridge should suffice, and the colour of the vine, which changes from red to blue, indicates when it’s time to enjoy it.
