Speri produces only one unique Amarone: a single-vineyard wine from the estate’s finest property, Sant’Urbano in Fumane. The grapes are hand-harvested, selecting only the sparsest clusters best suited for drying on straw mats. They are dried for around 100 days, losing about 40% of their weight, then destemmed, pressed, and fermented with 35 days of skin contact in temperature-controlled stainless steel tanks.
